I love food! When I found this site I was game. Here is the recipe for a wonderful summer salad, thanks Julie!
Asparagus and Black Bean Salad
1 lb asparagus, cut into tidbits, cooked until tender crisp and bright green
1 16 oz can black beans, drained and rinsed
1 red bell pepper, chopped
1 T onion
1 T onion
Cilantro dressing
3 T olive oil
1 T cilantro
2 T vinegar
1/2 t salt
1/2 t cumin
dash pepper
1 clove garlic, minced
Shake well the dressing ingredients and pour over the salad. Marinate for atleast a few hours.
